A lot of water, fibers, proteins; the presence of fats is almost irrelevant: these characteristics make broad beans suitable for low-calorie diets. Many minerals are contained: among these, iron – obviously vegetal – stands out, which makes broad beans flour a recommended food even when this mineral is lacking. Lots of vitamins are here, including ascorbic acid. Cooking procedure:

– Cook in a generous amount of boiling water for at least 5 minutes over medium heat.
– Avoid mixing during the first few minutes of cooking.
